I’ve had quite a few companies reaching out to me lately to try and review a product  on Live Green Mom.  More often than not, I would rather just give the product away to a reader. Most companies are amenable to that, so… let’s give something away!

I love olive oil, use it for everything! I try and buy organic when I can, there is usually a good deal at Trader Joe’s on it or a decent coupon floating around.  I like Carapelli organic olive oil, it has a smooth yet robust flavor that goes well with anything I pair it with.

My readers all know that soup is my favorite food.  Paired with a fresh bread and salad, I could eat it most days of the week.  Here’s a  recipe with Carapelli organic olive oil that’s easy, healthy, and delish.

Zuppa di Farro

Made with Carapelli Organic Extra Virgin Olive Oil

Serves 4-6

3 potatoes, cut in ½-inch cubes

8 oz. can Cannellini beans

4 oz. farro

3 tomatoes, diced

2 garlic cloves, minced

10 fresh sage leaves

½ cup Carapelli Organic Extra Virgin Olive Oil

3 pints vegetable or chicken stock

½ cup Parmesan cheese, freshly grated

Salt and pepper, to taste

Cook potatoes in half cup of the Carapelli Organic Extra Virgin Olive Oil. Add garlic and half of the sage leaves; cook 3 – 5 minutes.

Add stock and cook for 15 minutes.  Season with salt and pepper.

Add cooked farro, Cannellini beans, and diced tomatoes and simmer another 15 minutes. Finish with drizzle of Carapelli Organic Extra Virgin Olive Oil and the other half of the sage leaves.  Add parmesan cheese to taste.

    1. Some people use it to clean their face, google ‘olive oil face cleansing method’ – I don’t know if i could go that far!

  2. I use organic olive oil daily for digestion. I also use it when I do a liver flush.

  3. In our home we only cook w. Olive Oil however, we can’t afford organic. We only buy evoo. When I make homemade popcorn every week, I use evoo instead of butter or oil. Yummy!

  5. My boyfriend thinks I’m odd because I use olive oil for nearly everything rather than anything else. Why use bad for you fats when you can use the good for you kind in Olive oil?

I love olive oil, it actually is the only oil I use in my kitchen, even I cook Chinese food mostly, it’s not only healthy, tasty and also it’s very useful but not disgusting to remove the bubble gum from ur kid’s hair( better than peanutbutter oil or baby oil),oh, the receipt looks yummy, too, definitely will try it :) ) tx for sharing!
