Celebrating Spring with The Blissful Chef

Christy Morgan over at The Blissful Chef has developed an e*cookbook called “Cooking With The Seasons – Spring Edition” that includes 19 delish vegan and macrobiotic recipes. These recipes range from appetizers, soups and salads to main courses and desserts.
The thought behind her spring cookbook is a time of renewal and cleansing. After all, what is spring but renewal? Her recipes are also geared towards alkalizing your body. Alkalizing your body is the process in choosing certain foods that balance the body between being too acidic and too alkaline. An acidic body is a body that had consumed too many highly processed foods, meats, soda, sugars, fats, etc. Bodies that are acidic are more inclined to get sick. This is not quackery: if you eat junk, what do you expect? A more alkaline body has consumed less processed foods. Brightly colored fruits and vegetables should be the goal. A body that has eaten a healthier plant based diet has less tendency to get ill. Again with the obvious, right? I’ll touch on alkalizing more in later posts.
One point you will hear over and over again from me is that TOO MUCH of anything is not a good thing. Acidic foods and treats are allowed in life, they should be! In moderation. I do not want to feel deprived. But I have noticed over the past year of working towards alkalizing my body that the overall craving for sweets and junk has decidedly dropped. I used to think this was something that health nuts used to say just to be enthusiastic or convincing, until I realized that I had no problem turning away excess junk and did not feel deprived. I did not feel like a martyr trying to make a point. I just didn’t want it, so I didn’t eat it or have to fight it. Simple!
If you have been following me, you know I love soup. Soup is my favorite type of meal. Versatile! So many variations! You cannot go wrong with soup. So when I saw Christy’s recipe for “Love Your Heart Beet Soup”, I had to try it. It looked easy, and I had never in my life had tasted a beet before. I know, odd, right?
It was so good I have made it four times in the past month and have some in my freezer for a beet soup fix should the need arise. Who knew beets were so tasty? Beets are an alkalizing root vegetable. The recipe also has umeboshi vinegar, another alkalizing ingredient.
Naturally, I had to make another recipe from her “Cooking With the Seasons – Spring Edition” that had beets included. Red quinoa salad! I love quinoa! Quinoa is rice-like but much healthier, high in protein, calcium, and iron, as well as vitamin E and some B-vitamins. Add in fresh, ripe avocados and basil and you can just taste spring.
I enjoyed my red quinoa salad, it was again, an easy recipe, yummy and filling. It was dinner and two lunches for me.
I like that you can get Christy Morgan’s cookbook easily over the web. Very green! Just download and print! I can’t even get into how much this won’t impact the environment, from not having to print and ship books, to the consumer not having to drive somewhere to buy it, and everything in between. The e*cookbook not only is a smart green alternative to traditional cookbooks, it is reasonably priced as a result of being green. I have never had beets either – don’t feel bad! I would love to try these and what a deal for 5.99. I like that it would be on my computer bc I am tired of having stacks of cookbooks just taking up space. TY!!
